Carrot-Coriander Soup

 The hardest thing for any bachelor on every Sunday morning is to decide what they’re going to have the whole day. During one of those Sundays of mine, I wake up to a grumbling stomach, desperately searching for something edible in the kitchen. I find only two edible things and they happen to be two baby carrots and few handfuls of coriander leaves. With a very little ingredient available at that time, I decided to prepare this weird combination Carrot-Coriander soup.
ALL YOU NEED IS:
  • 2 baby carrots
  • 1 large onion
  • 1tbsp oil
  • 1tsp mashed coriander
  • 2 cloves garlic
  • fresh coriander (chopped)
HOW TO MAKE IT:
1.     Heat the oil in a large pan.
2.     Add the diced onion and crushed garlic.
3.     Fry off for about a minute.
4.     Add the chopped carrots and fry for about 5 minutes.
5.     Add the ground/mashed coriander stir in well.
6.     Simmer for about 30 minutes or until the carrot is soft.
7.     Put in blend and blend until smooth.
8.     Add fresh coriander on top it.

Maybe I was ravenous at that time and was in desperate need of food, that I couldn’t click a picture.
